SUSHI & SASHIMI

Traditional sushi is a delicacy that originated in Japan centuries ago. It is a dish that involves fresh, raw fish, carefully sliced and served on a bed of sticky, seasoned rice. The perfect sushi requires a delicate balance of flavours and textures, with the right amount of fish and rice, and the right glaze to enhance its flavour.
One of the key differences between high-quality sushi and low-quality sushi is the ratio of fish to rice. High-quality sushi typically has a higher ratio of fish to rice, which means that each piece of sushi has a larger piece of fish on top. This is because high-quality sushi chefs take great care in selecting the freshest and most flavourful fish, and they want to showcase the fish’s natural flavors as much as possible.
In addition to the fish-to-rice ratio, the glaze used on sushi can also make a big difference in its flavour. Many sushi chefs use a special glaze made from soy sauce, mirin, and sugar to add a sweet and savoury flavour to the sushi. The glaze can also help to enhance the natural flavours of the fish and rice.
Overall, traditional sushi is a delicate and delicious dish that requires careful attention to detail to create the perfect balance of flavours and textures. High-quality sushi typically has a higher ratio of fish to rice and uses a special glaze to enhance its flavour that contributes to a justified slightly higher price.
